Description

Ingredients

  • 1 cup all-purpose flour, plus extra for dusting
  • 1 cup pastry flour
  • ½ cup cold unsalted butter, cubed
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon instant yeast
  • ½ cup warm whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Oil for frying (about 2 inches deep)
  • 1 cup powdered sugar for coating
  • ¼ teaspoon cinnamon (optional)

Instructions

  1. Combine all-purpose flour, pastry flour, granulated sugar, salt, and instant yeast in a large bowl and whisk.
  2. Stir in warm whole milk, egg, and vanilla extract until a sticky dough forms.
  3. Cut in the chilled cubed butter until you have small, pea-sized pieces without overworking the dough.
  4. Knead the dough on a floured surface for about 3-4 minutes, cover it, and let it rise until doubled in size (about 1 hour).
  5. Roll the dough out into a rectangle, then fold it like a letter 2-3 times and chill for 30 minutes.
  6. Roll the dough to about ½-inch thickness and cut circles, removing centers with a smaller cutter.
  7. Heat oil in a large pot to 350°F (175°C).
  8. Fry each cronut for about 2 minutes on each side until golden brown.
  9. Transfer to paper towels to absorb excess oil and immediately toss in powdered sugar.
  10. Savor warm for the ultimate flaky, buttery indulgence.

Notes

Make ahead the dough the night before and store it in the fridge overnight. Consider using an air fryer for a lighter version.
