Instructions
- Combine all-purpose flour, pastry flour, granulated sugar, salt, and instant yeast in a large bowl and whisk.
- Stir in warm whole milk, egg, and vanilla extract until a sticky dough forms.
- Cut in the chilled cubed butter until you have small, pea-sized pieces without overworking the dough.
- Knead the dough on a floured surface for about 3-4 minutes, cover it, and let it rise until doubled in size (about 1 hour).
- Roll the dough out into a rectangle, then fold it like a letter 2-3 times and chill for 30 minutes.
- Roll the dough to about ½-inch thickness and cut circles, removing centers with a smaller cutter.
- Heat oil in a large pot to 350°F (175°C).
- Fry each cronut for about 2 minutes on each side until golden brown.
- Transfer to paper towels to absorb excess oil and immediately toss in powdered sugar.
