Description
A French-inspired toast featuring layers of savory ham, rich mornay sauce, and a soft egg yolk, perfect for brunch or a comforting meal.

- 15 grams unsalted butter
- 8 grams all-purpose flour
- 150 millilitres whole milk
- 0.5 gram dry mustard
- 0.5 gram ground ginger
- 35 grams gruyere cheese, shredded
- 15 grams Parmesan cheese, finely grated
- Salt and freshly cracked black pepper, to taste
- 3 slices sourdough bread, lightly buttered and toasted
- 45 grams whole grain prepared mustard
- 170 grams smoked ham, thinly sliced
- 3 large egg yolks
Instructions
- Melt the butter in a small saucepan over medium heat.
- Add the flour to the melted butter and stir constantly for 2 to 3 minutes.
- Incorporate the milk gradually while whisking vigorously.
- Add the dry mustard, ground ginger, gruyere, and Parmesan; cook for 3 to 4 minutes.
- Preheat the broiler while the sauce cools slightly.
- Assemble the toasts by spreading whole grain mustard on one side of each slice.
- Ladle approximately 60 millilitres of mornay sauce over each ham-topped toast.
- Nestle an egg yolk into each well of sauce.
- Broil for 3 to 4 minutes until bubbly and yolks remain soft.
Notes
Store leftovers in an airtight container in the fridge for up to two days. Reheat gently in the oven to maintain crispiness.
