Description

Irresistibly delightful mini potato skins filled with creamy cheese and topped with sour cream and green onions.


Ingredients

  • Small Potatoes
  • Olive Oil
  • Salt
  • Pepper
  • Cheddar Cheese
  • Sour Cream
  • Green Onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the small potatoes, then prick them several times with a fork.
  3. Drizzle olive oil over the potatoes and sprinkle with salt and pepper, massaging it in.
  4. Arrange the potatoes on a baking sheet and roast for 30-35 minutes until tender.
  5. Allow the potatoes to cool slightly, then cut them in half and scoop out some of the flesh.
  6. Fill each potato half with shredded cheddar cheese and bake for an additional 10 minutes until cheese is melted.
  7. Top with a dollop of sour cream and a sprinkle of green onions before serving.

Notes

Consider adding crispy bacon bits or jalapeños for extra flavor. Use an air fryer for a quicker alternative.
