Ingredients
- Small Potatoes
- Olive Oil
- Salt
- Pepper
- Cheddar Cheese

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the small potatoes, then prick them several times with a fork.
- Drizzle olive oil over the potatoes and sprinkle with salt and pepper, massaging it in.
- Arrange the potatoes on a baking sheet and roast for 30-35 minutes until tender.
- Allow the potatoes to cool slightly, then cut them in half and scoop out some of the flesh.
- Fill each potato half with shredded cheddar cheese and bake for an additional 10 minutes until cheese is melted.
- Top with a dollop of sour cream and a sprinkle of green onions before serving.
Notes
Consider adding crispy bacon bits or jalapeños for extra flavor. Use an air fryer for a quicker alternative.
