Ingredients

  • 1 cup granulated sugar
  • 1 tsp baking powder

  • ½ tsp ground ginger
  • ½ tsp salt
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 ½ cups shredded carrots
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Whisk together the flour, sugar, baking powder, cinnamon, ginger, and salt in a large bowl until light and fluffy.
  3. Mix the vegetable oil and eggs in another bowl until fluffy. Gradually combine this with the dry ingredients, stirring until just mixed.
  4. Fold in the shredded carrots and nuts until evenly distributed.
  5. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Make the frosting by mixing cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Frost the cooled bars generously with the cream cheese mixture and slice into squares.
