- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Guava Juice (for batter)
- 3 large Eggs (room temperature)
- 1/2 cup Coconut Oil (melted)
- 8 oz Cream Cheese (room temperature)
- 1/2 cup Granulated Sugar
- 1 tsp Vanilla Extract
- 8 oz Cool Whip (thawed)
- 2 1/2 cups Guava Nectar or Guava Juice (for glaze)
- 1/2 cup Granulated Sugar
- 2 tbsp Cornstarch
- 1/4 cup Water
- 1 cup Sweetened Coconut Flakes (for garnish)
Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and set it aside.
- Mix the Batter: In a large bowl, combine the strawberry cake mix, guava nectar, eggs, and melted coconut oil. Use a hand mixer or stand mixer to beat until the mixture is well combined and smooth.
- Pour the batter into the prepared pan and spread evenly. Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
- Beat the cream cheese and sugar until smooth and creamy. Add the vanilla and gradually fold in the Cool Whip until fully combined.
- Once the cake has completely cooled, spread the cream cheese frosting evenly over the top.
- Combine 2 1/2 cups guava nectar, 1/2 cup sugar, and 2 tablespoons of cornstarch mixed with 1/4 cup water. Stir until the mixture thickens and becomes shiny.
- Allow the glaze to cool slightly before pouring it over the frosted cake, allowing it to cascade down the sides.
- Sprinkle sweetened coconut flakes generously over the top of the cake.
Notes
Make ahead tips: Prepare the cake and glaze a day in advance and frost before serving for the best texture. Customize by adding shredded pineapple or macadamia nuts.
