Description

A delightful and moist cake infused with sweet guava nectar and topped with rich cream cheese frosting and a glossy guava glaze, garnished with coconut flakes.


Ingredients

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice (for batter)
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (for glaze)
  • 1/2 cup Granulated Sugar
  • 2 tbsp Cornstarch
  • 1/4 cup Water
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and set it aside.
  2. Mix the Batter: In a large bowl, combine the strawberry cake mix, guava nectar, eggs, and melted coconut oil. Use a hand mixer or stand mixer to beat until the mixture is well combined and smooth.
  3. Pour the batter into the prepared pan and spread evenly. Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
  5. Beat the cream cheese and sugar until smooth and creamy. Add the vanilla and gradually fold in the Cool Whip until fully combined.
  6. Once the cake has completely cooled, spread the cream cheese frosting evenly over the top.
  7. Combine 2 1/2 cups guava nectar, 1/2 cup sugar, and 2 tablespoons of cornstarch mixed with 1/4 cup water. Stir until the mixture thickens and becomes shiny.
  8. Allow the glaze to cool slightly before pouring it over the frosted cake, allowing it to cascade down the sides.
  9. Sprinkle sweetened coconut flakes generously over the top of the cake.

Notes

Make ahead tips: Prepare the cake and glaze a day in advance and frost before serving for the best texture. Customize by adding shredded pineapple or macadamia nuts.
