Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas thoroughly with a fork until mostly smooth.
  3. Add the softened butter to the mashed bananas and mix until creamy and well combined.
  4. Stir in the brown sugar, then add the egg and vanilla extract. Beat until glossy and cohesive.
  5. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. If using chocolate chips, fold them in gently.
  8. Use a cookie scoop or tablespoon to drop spoonfuls of dough onto the prepared baking sheet.
  9. Bake for 10–12 minutes, until edges are golden and centers are set.
  10. Let the cookies cool on the baking sheet for 3–5 minutes before transferring to a wire rack.
