- 4 boneless, skinless chicken breasts
- 2 tablespoons unsalted butter
- 1 tablespoon unsalted butter (for sautéing mushrooms)
- 8 ounces fresh sliced mushrooms
- 1 cup non-alcoholic white grape juice
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1/4 cup fresh parsley, chopped
- Salt & Pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat.
- Brown the chicken breasts for 4 to 5 minutes per side until golden brown. Remove from skillet.
- Sauté sliced mushrooms in the same skillet with another tablespoon of butter for about 5 minutes.
- Add minced garlic and thyme, cooking for another minute.
- Pour in the non-alcoholic grape juice and deglaze the skillet.
- Simmer with heavy cream, stirring until the sauce thickens.
- Return the chicken to the pan and let it simmer for about 10 minutes.
- Add chopped parsley before serving.
Notes
This dish is great paired with rice or pasta and can be made ahead for convenience. Customize with vegetables or cheese as desired.
