Ingredients
Scale
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 3 large eggs, room temperature
- 1 cup buttermilk or whole milk
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Pink, yellow, and blue gel food coloring
- 2 cups unsalted butter, softened (for frosting)
- 8 cups powdered sugar
- 1 tablespoon vanilla extract (for frosting)
- 1/2 teaspoon salt (for frosting)
- 1/3 cup heavy cream
- 24 Bunny Peeps
- 1 cup sweetened coconut flakes, dyed green
- Easter M&M’s candies
Instructions
- Preheat the oven to 350°F. Grease and flour three 9-inch round cake pans, then line the bottoms with parchment circles for easy release.
- Cream together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
- Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients and buttermilk alternately to the butter mixture, mixing just until smooth.
- Divide the batter evenly into three bowls and tint one bowl pink, one yellow, and one blue using gel food coloring.
- Pour each colored batter into the prepared pans, smoothing out the tops.
- Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Beat the softened butter for the frosting until creamy. Gradually add powdered sugar, mixing well after each addition.
- Mix in the vanilla extract, salt, and heavy cream, and beat until fluffy and smooth.
- Assemble the cake: Place the blue layer on a serving plate and frost the top evenly. Add the yellow layer and frost again. Finally, place the pink layer on top.
- Apply a thin crumb coat around the entire cake for stability and chill briefly.
- Frost the entire cake smoothly, then press Bunny Peeps around the edges.
- Fill the center with green coconut flakes, then sprinkle the Easter M&M’s candies on top for a festive finish.
