Ingredients

  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 cup buttermilk or whole milk
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Pink, yellow, and blue gel food coloring
  • 2 cups unsalted butter, softened (for frosting)
  • 8 cups powdered sugar
  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 1/3 cup heavy cream
  • 24 Bunny Peeps
  • 1 cup sweetened coconut flakes, dyed green
  • Easter M&M’s candies

Instructions

  1. Preheat the oven to 350°F. Grease and flour three 9-inch round cake pans, then line the bottoms with parchment circles for easy release.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
  3. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients and buttermilk alternately to the butter mixture, mixing just until smooth.
  6. Divide the batter evenly into three bowls and tint one bowl pink, one yellow, and one blue using gel food coloring.
  7. Pour each colored batter into the prepared pans, smoothing out the tops.
  8. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Beat the softened butter for the frosting until creamy. Gradually add powdered sugar, mixing well after each addition.
  11. Mix in the vanilla extract, salt, and heavy cream, and beat until fluffy and smooth.
  12. Assemble the cake: Place the blue layer on a serving plate and frost the top evenly. Add the yellow layer and frost again. Finally, place the pink layer on top.
  13. Apply a thin crumb coat around the entire cake for stability and chill briefly.
  14. Frost the entire cake smoothly, then press Bunny Peeps around the edges.
  15. Fill the center with green coconut flakes, then sprinkle the Easter M&M’s candies on top for a festive finish.

Notes

This cake can be baked a day in advance. Wrap tightly in plastic wrap and store in the fridge. Customize with different candies if desired.
