- 1 box vanilla cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 box (3.4 ounces) instant vanilla pudding mix
- 2 cups milk
- 2–3 colors of food coloring
- 1 container (8 ounces) whipped topping (e.g., Cool Whip)
- Easter sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking dish.
- In a large mixing bowl, combine the vanilla cake mix, water, vegetable oil, and eggs. Use an electric mixer on medium speed for about 2 minutes until smooth.
- Transfer the batter to the prepared dish and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cake to cool for about 10 minutes, then poke holes all over the surface using the handle of a wooden spoon.
- In another bowl, whisk together the instant pudding mix and milk until thickened. Divide the pudding and add food coloring to create pastel shades.
- Pour the colored pudding into the holes of the cake, allowing it to seep in.
- Spread whipped topping over the surface and refrigerate for at least 2 hours.
- Top with Easter sprinkles just before serving.
Notes
Make-ahead: This cake can be prepared a day in advance to enhance the flavors. Allow it to chill in the refrigerator.
