Description

Ingredients

  • 1 box vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 box (3.4 ounces) instant vanilla pudding mix
  • 2 cups milk
  • 23 colors of food coloring
  • 1 container (8 ounces) whipped topping (e.g., Cool Whip)
  • Easter sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking dish.
  2. In a large mixing bowl, combine the vanilla cake mix, water, vegetable oil, and eggs. Use an electric mixer on medium speed for about 2 minutes until smooth.
  3. Transfer the batter to the prepared dish and bake for 30-35 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool for about 10 minutes, then poke holes all over the surface using the handle of a wooden spoon.
  5. In another bowl, whisk together the instant pudding mix and milk until thickened. Divide the pudding and add food coloring to create pastel shades.
  6. Pour the colored pudding into the holes of the cake, allowing it to seep in.
  7. Spread whipped topping over the surface and refrigerate for at least 2 hours.
  8. Top with Easter sprinkles just before serving.

Notes

Make-ahead: This cake can be prepared a day in advance to enhance the flavors. Allow it to chill in the refrigerator.
