- 8 oz Mozzarella, diced
- 3 oz Green Olives, sliced
- 1/2 cup Red Onion, chopped

- 1 bunch Fresh Cilantro, chopped
- 1/4 cup Red Wine Vinegar
- 1/2 cup Extra Virgin Olive Oil
- 2 tsp Dijon Mustard
- 1 clove Minced Garlic
- 1/8 to 1/4 teaspoon Crushed Red Pepper Flakes
- 1/4 teaspoon Sea Salt
- Juice from 1 lemon
Instructions
- Prep the Ingredients: Rinse and drain the chickpeas and white beans. Chop the red onion, mozzarella, and fresh herbs into bite-sized pieces.
- Mix the Dressing: In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, crushed red pepper flakes, sea salt, and lemon juice. Taste and adjust seasoning if needed.
- Combine the Salad: In a large mixing bowl, combine the chickpeas, white beans, chopped olives, mozzarella, red onion, parsley, and cilantro.
