- 2 cups granulated sugar
- 4 oz. unsalted butter
- ⅓ cup melted vanilla ice cream
- 1 cup Ghirardelli Green Chips
- 1 cup white chocolate chips
- 7 oz. jar marshmallow crème
- Shamrock sprinkles (optional)
Instructions
- Combine the granulated sugar, unsalted butter, and melted vanilla ice cream in a medium saucepan. Heat over medium heat, stirring constantly until it reaches a boil.
- Simmer and reduce the heat to medium-low, allowing to simmer for about 7-10 minutes, monitoring the temperature with a candy thermometer aiming for 234°F.
- Add the white chocolate chips and green mint chips, mixing until everything melts and the texture becomes smooth.
- Incorporate the marshmallow crème until fully combined, ensuring a creamy consistency.
- Pour the fudge mixture into the prepared baking pan and spread it evenly. If using, sprinkle shamrock sprinkles on top, gently pressing into the fudge.
- Cool down at room temperature until firm, which should take a couple of hours. Cut into squares and enjoy!
Notes
Store the fudge in an airtight container in the fridge for up to a week or freeze for longer storage. Customize with different chocolate types or add-ins.
