Description

A vibrant treat that transforms the classic flavors of a beloved St. Patrick’s Day shake into a delectable, creamy fudge.


Ingredients

  • 2 cups granulated sugar
  • 4 oz. unsalted butter
  • ⅓ cup melted vanilla ice cream
  • 1 cup Ghirardelli Green Chips
  • 1 cup white chocolate chips
  • 7 oz. jar marshmallow crème
  • Shamrock sprinkles (optional)

Instructions

  1. Combine the granulated sugar, unsalted butter, and melted vanilla ice cream in a medium saucepan. Heat over medium heat, stirring constantly until it reaches a boil.
  2. Simmer and reduce the heat to medium-low, allowing to simmer for about 7-10 minutes, monitoring the temperature with a candy thermometer aiming for 234°F.
  3. Add the white chocolate chips and green mint chips, mixing until everything melts and the texture becomes smooth.
  4. Incorporate the marshmallow crème until fully combined, ensuring a creamy consistency.
  5. Pour the fudge mixture into the prepared baking pan and spread it evenly. If using, sprinkle shamrock sprinkles on top, gently pressing into the fudge.
  6. Cool down at room temperature until firm, which should take a couple of hours. Cut into squares and enjoy!

Notes

Store the fudge in an airtight container in the fridge for up to a week or freeze for longer storage. Customize with different chocolate types or add-ins.
