- 1 sheet frozen puff pastry, thawed
- 4 ounces brie cheese, rind removed, cut into 12 small cubes
- 1/4 cup cranberry sauce or jam
- 1/4 cup chopped pecans or walnuts
- 1 tablespoon brown sugar (optional, for the nuts)
- 1 tablespoon butter, melted (optional, for the nuts)
- Fresh chives or parsley, finely chopped, for garnish (optional)
- 1 large egg, whisked with 1 teaspoon water (for egg wash)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly spray a mini muffin tin with non-stick cooking spray.
- Unroll the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 12 equal squares (about 2.5 inches each).
- Carefully press each pastry square into a cavity of the prepared mini muffin tin, shaping it into a cup.
- Brush the bottom and sides of each pastry cup with the egg wash to prevent sogginess.
- Bake the empty pastry cups for 8-10 minutes, or until they are slightly puffed and lightly golden around the edges.
- While the pastry bakes, combine the chopped pecans with brown sugar and melted butter in a small bowl (if using).
- Remove the muffin tin from the oven and gently press down the center of each pastry cup if it has puffed up too much. Place one cube of brie cheese into the bottom of each partially baked pastry cup.
- Spoon about one teaspoon of cranberry sauce or jam over the brie in each cup.
- Sprinkle the sugared pecans (or plain pecans) over the cranberry topping.
- Return the muffin tin to the oven and bake for another 10-12 minutes, or until the pastry is golden brown and the brie cheese is melted and bubbly.
- Let the bites cool in the muffin tin for a few minutes before carefully removing them. Garnish with fresh chives or parsley, if desired, and serve warm.
