Description

Ingredients

  • 1 1/4 cups (150g) all-purpose flour
  • 1/4 cup (30g) powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1 large egg yolk
  • 12 tablespoons cold water
  • 8 ounces (225g) high-quality white chocolate, chopped
  • 1 cup (240ml) heavy cream, chilled
  • 1/4 cup (60ml) milk (whole or 2%)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon unflavored gelatin (optional)
  • Fresh raspberries, strawberries, or blueberries
  • White chocolate curls or shavings
  • Mint leaves
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, powdered sugar, cinnamon, nutmeg, and salt in a mixing bowl.
  3. Add the cold butter and blend until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk, then add enough cold water to form a dough.
  5. Press the dough into your tart pan and chill for 30 minutes.
  6. Bake the crust for about 20 minutes or until golden brown. Let cool completely.
  7. In a microwave-safe bowl, gently melt the white chocolate until smooth; allow to cool slightly.
  8. Whip the heavy cream to soft peaks in a separate bowl.
  9. Fold the melted chocolate into the whipped cream carefully.
  10. Add the milk, vanilla extract, and gelatin (if using), mixing until smooth.
  11. Pour the mousse into the cooled tart shell and smooth the surface.
  12. Refrigerate until set, about 2 hours.
  13. Decorate with fresh berries, white chocolate curls, and mint leaves before serving.

Notes

Prepare the tart crust and mousse a day ahead to save time. For gluten-free, substitute all-purpose flour with a gluten-free blend.
