- 1 1/4 cups (150g) all-purpose flour
- 1/4 cup (30g) powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup (113g) cold unsalted butter, cubed
- 1 large egg yolk
- 1–2 tablespoons cold water
- 8 ounces (225g) high-quality white chocolate, chopped
- 1 cup (240ml) heavy cream, chilled
- 1/4 cup (60ml) milk (whole or 2%)
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon unflavored gelatin (optional)
- Fresh raspberries, strawberries, or blueberries
- White chocolate curls or shavings
- Mint leaves
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Combine flour, powdered sugar, cinnamon, nutmeg, and salt in a mixing bowl.
- Add the cold butter and blend until the mixture resembles coarse crumbs.
- Stir in the egg yolk, then add enough cold water to form a dough.
- Press the dough into your tart pan and chill for 30 minutes.
- Bake the crust for about 20 minutes or until golden brown. Let cool completely.
- In a microwave-safe bowl, gently melt the white chocolate until smooth; allow to cool slightly.
- Whip the heavy cream to soft peaks in a separate bowl.
- Fold the melted chocolate into the whipped cream carefully.
- Add the milk, vanilla extract, and gelatin (if using), mixing until smooth.
- Pour the mousse into the cooled tart shell and smooth the surface.
- Refrigerate until set, about 2 hours.
- Decorate with fresh berries, white chocolate curls, and mint leaves before serving.
Notes
Prepare the tart crust and mousse a day ahead to save time. For gluten-free, substitute all-purpose flour with a gluten-free blend.
