A vibrant salad that combines nutty farro with crisp fennel, sweet oranges, and toasted almonds, perfect for a light lunch or as a side dish.

- 1 cup uncooked whole grain farro
- 3 cups water
- 1/2 teaspoon kosher salt
- 1 medium fennel bulb, thinly sliced (fronds reserved for garnish)
- 2 large oranges, peeled and segmented
- 2 cups arugula or baby spinach
- 2 tablespoons chopped fresh parsley
- 1/2 cup sliced almonds, toasted
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed orange juice
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Rinse the farro under cold water. In a medium saucepan, combine the farro, water, and kosher salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for 25-30 minutes until tender yet chewy. Drain excess water and cool.
- While the farro cooks, toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Transfer to a plate to cool.
- In a large mixing bowl, combine the cooled farro, fennel, orange segments, arugula or spinach, and parsley. Toss gently.
- In a small bowl or jar, whisk together the olive oil, orange juice, lemon juice, honey (or maple syrup), Dijon mustard, sea salt, and black pepper until emulsified.
- Pour the dressing over the salad mixture and toss to coat. Top with toasted almonds and garnish with fennel fronds. Serve immediately or chill for 30 minutes.
Notes
Make-ahead tips: Prepare farro and dressing ahead of time; combine with fresh ingredients before serving. Skipping toasting the nuts may decrease flavor.
