Description

A delightful energy-boosting snack made with dried figs, oats, and nuts.


Ingredients

  • 1 cup dried figs, chopped
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut/seed butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1/2 cup chopped nuts (walnuts, almonds, or pecans)
  • 1/4 cup chia seeds
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: 1/4 cup dark chocolate chips or cacao nibs

Instructions

  1. In a large mixing bowl, combine the chopped figs, rolled oats, almond butter, honey or maple syrup, and vanilla extract. Mix until well incorporated.
  2. Stir in the chopped nuts, chia seeds, cinnamon, and salt until evenly distributed. Fold in chocolate chips or cacao nibs if using.
  3. With clean hands, take small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls. Wet your hands slightly if the mixture is too sticky.
  4. Place the rolled bites onto a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  5. Transfer the chilled energy bites to an airtight container for storage. They can be kept in the refrigerator for up to one week or in the freezer for longer shelf life.
