Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the peanut butter, softened butter, brown sugar, and granulated sugar in a large bowl using an electric mixer for about 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients gradually to the wet mixture and mix just until no flour remains visible.
  6. Fold in the marshmallow fluff gently.
  7. Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes until edges are golden.
  9. Cool on baking sheets for a few minutes before transferring to a wire rack.

For best results, refrigerate the dough overnight. You can freeze the formed dough rounds and bake them straight from the freezer.
