Succulent pork chops in a velvety onion gravy, accented by garlic and fresh thyme, topped with melted cheese.

- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 pork chops (bone-in, about 1 inch thick)
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon fresh thyme leaves
- 1 cup shredded Gruyère cheese (or mozzarella)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or thyme, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season both sides of the pork chops generously with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Lay the pork chops in and sear for about 3–4 minutes on each side until golden brown. Remove and set aside.
- Lower the heat to medium and add butter to the skillet. Cook the sliced onions for 20–25 minutes, stirring occasionally until caramelized.
- Add minced garlic and cook for another minute.
- Pour in beef broth, scraping up brown bits, and add fresh thyme. Let simmer for 3–5 minutes.
- Place the pork chops back into the skillet and top with shredded cheese.
- Transfer to the oven and bake for 10–12 minutes until cheese is melted and pork reaches 145°F internal temperature.
- Garnish with fresh herbs and serve hot with onion gravy spooned over each chop.
Notes
Make-ahead by slicing the onions and marinating the pork overnight. For alternative cooking, use air fryer for pork chops.
