Description

Succulent pork chops in a velvety onion gravy, accented by garlic and fresh thyme, topped with melted cheese.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 pork chops (bone-in, about 1 inch thick)
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon fresh thyme leaves
  • 1 cup shredded Gruyère cheese (or mozzarella)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or thyme, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season both sides of the pork chops generously with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Lay the pork chops in and sear for about 3–4 minutes on each side until golden brown. Remove and set aside.
  4. Lower the heat to medium and add butter to the skillet. Cook the sliced onions for 20–25 minutes, stirring occasionally until caramelized.
  5. Add minced garlic and cook for another minute.
  6. Pour in beef broth, scraping up brown bits, and add fresh thyme. Let simmer for 3–5 minutes.
  7. Place the pork chops back into the skillet and top with shredded cheese.
  8. Transfer to the oven and bake for 10–12 minutes until cheese is melted and pork reaches 145°F internal temperature.
  9. Garnish with fresh herbs and serve hot with onion gravy spooned over each chop.

Notes

Make-ahead by slicing the onions and marinating the pork overnight. For alternative cooking, use air fryer for pork chops.
