Ingredients

- 1.5 lbs beef (cut into bite-sized pieces)
- 1 lb baby potatoes (halved)
- 4 cloves garlic (minced)
- 1/2 cup unsalted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup beef broth
Instructions
- In a slow cooker, add the beef and potatoes.
- In a saucepan, melt the butter over medium heat; add garlic and sauté until fragrant.
- Pour the garlic butter over the beef and potatoes.
- Add salt, pepper, thyme, rosemary, and beef broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
- Serve hot and enjoy your cozy dinner!
Notes
For variation, add carrots or pearl onions. You can also use stew meat instead of bite-sized beef.
