Description

Ingredients

  • 1.5 lbs beef (cut into bite-sized pieces)
  • 1 lb baby potatoes (halved)
  • 4 cloves garlic (minced)
  • 1/2 cup unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup beef broth

Instructions

  1. In a slow cooker, add the beef and potatoes.
  2. In a saucepan, melt the butter over medium heat; add garlic and sauté until fragrant.
  3. Pour the garlic butter over the beef and potatoes.
  4. Add salt, pepper, thyme, rosemary, and beef broth. Stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
  6. Serve hot and enjoy your cozy dinner!

Notes

For variation, add carrots or pearl onions. You can also use stew meat instead of bite-sized beef.
