Description

A delightful meal featuring succulent garlic herb chicken, buttery mashed potatoes, and sweet honey-glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 large russet potatoes, peeled and cubed
  • ½ cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 1 pound carrots, peeled and sliced into coins
  • 2 tablespoons butter
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven: Set it to 400°F (200°C) to get it ready for roasting.
  2. Prepare the chicken: In a small bowl, mix the minced garlic, chopped thyme, rosemary, and olive oil. Season with salt and pepper.
  3. Rub and sear: Coat both sides of the chicken breasts with your garlic herb mixture. Heat a large ovenproof skillet over medium-high heat and add the butter until it sizzles. Sear the chicken for about 3-4 minutes on each side until golden brown.
  4. Transfer the skillet to your preheated oven. Bake for 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  5. Make the mashed potatoes: While the chicken cooks, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, approximately 15-20 minutes. Drain and return them to the pot, adding the milk, butter, and seasonings. Mash until smooth.
  6. Glaze the carrots: In a medium skillet over medium heat, melt the butter. Sauté the sliced carrots for 5-6 minutes, then drizzle with honey and season well. Continue to cook for another 3-4 minutes.

Notes

Taste the chicken rub and adjust as needed. Feel free to substitute the herbs or spice it up with red pepper flakes.
