- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 3 tablespoons butter
- 3 cups carrots, sliced
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, minced garlic, parsley, and thyme.
- In a large skillet, heat the olive oil over medium heat and cook the seasoned chicken until golden brown, about 5-7 minutes per side.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Meanwhile, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter, seasoning with salt to taste.
- Boil sliced carrots in water for about 5 minutes until tender, drain, and return to the pot with brown sugar, stirring until glazed.
- Serve the chicken with mashed potatoes and glazed carrots, optionally drizzling pan juices over the potatoes.
Notes
You can customize the herbs and vegetable options to your preference. Roasting garlic adds a sweeter flavor.
