Description

Delicious cookies that taste like coffee cake, featuring warm cinnamon and a crunchy streusel topping.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup chopped nuts (optional, such as walnuts or pecans)
  • 1 cup mini chocolate chips (optional)
  • Streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3–4 minutes).
  3. Add the eggs one at a time, mixing well after each. Stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Add the dry mix to the wet mix slowly and mix until just combined. Do not overmix.
  6. Fold in the chopped nuts and mini chocolate chips if you use them.
  7. Make the streusel: combine flour, brown sugar, and cinnamon in a small bowl. Pour in the melted butter and mix until crumbly.
  8. Use a cookie scoop or tablespoon to place dough balls on the baking sheets, about 2 inches apart.
  9. Sprinkle streusel generously on top of each cookie dough ball.
  10. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are still soft.
  11. Let the cookies cool on the baking sheets for about 5 minutes, then transfer to wire racks to cool completely.

Notes

For a variation, omit nuts and chips for a plain cookie, or add dried fruit for a different flavor.
