- 1 1/2 cups gluten free rolled oats
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/4 teaspoon salt
- 1/3 cup melted coconut oil
- 2 cups fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Combine the gluten-free rolled oats, almond flour, coconut sugar, and salt in a large mixing bowl.
- Pour in the melted coconut oil and mix until the dough resembles wet sand.
- Set aside about one-third of the oat mixture and press the remaining two-thirds into the bottom of the prepared pan.
- Bake the crust for 10 minutes until it begins to set and turn golden.
- In a small saucepan over medium heat, combine the strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook until thickened, about 5–7 minutes.
- Spread the warm strawberry filling over the baked crust.
- Crumble the reserved oat mixture over the strawberry layer.
- Return to the oven and bake for another 20–25 minutes until golden.
- Let the bars cool completely before slicing.
Notes
Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
