Description

Delicious gluten-free strawberry bars with a chewy oat crust and a sweet, fruity filling, perfect for any occasion.


Ingredients

  • 1 1/2 cups gluten free rolled oats
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 teaspoon salt
  • 1/3 cup melted coconut oil
  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Combine the gluten-free rolled oats, almond flour, coconut sugar, and salt in a large mixing bowl.
  3. Pour in the melted coconut oil and mix until the dough resembles wet sand.
  4. Set aside about one-third of the oat mixture and press the remaining two-thirds into the bottom of the prepared pan.
  5. Bake the crust for 10 minutes until it begins to set and turn golden.
  6. In a small saucepan over medium heat, combine the strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook until thickened, about 5–7 minutes.
  7. Spread the warm strawberry filling over the baked crust.
  8. Crumble the reserved oat mixture over the strawberry layer.
  9. Return to the oven and bake for another 20–25 minutes until golden.
  10. Let the bars cool completely before slicing.

Notes

Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
