- 1 pound Flank, Ribeye, or New York Strip
- 2 medium Zucchini
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 tablespoon Dijon Mustard (optional)
- 1 cup Sour Cream or Greek Yogurt
- 2 tablespoons Fresh Herbs (Chives or Parsley)
- 2 cups Cooked Rice or Mashed Potatoes
Instructions
- Choose your cut of steak and slice zucchini into rounds or half-moons.
- In a bowl, combine olive oil, garlic powder, onion powder, and Dijon mustard. Toss zucchini to coat.
- Season steak with salt and pepper.
- Preheat your grill to medium-high temperature.
- Grill steak for about 4–6 minutes on each side, adding zucchini during the last few minutes until they’re tender.
- In a bowl, mix sour cream or Greek yogurt with fresh herbs.
- Let the steak rest for 5 minutes, then slice against the grain.
- Layer rice or mashed potatoes, add grilled zucchini and steak, then drizzle with the creamy herb sauce.
- Serve warm and enjoy!
Notes
For added flavor, marinate the steak before grilling. Feel free to swap vegetables as per your preference.
