Description

A playful and festive Grinch avocado charcuterie board perfect for holiday gatherings.


Ingredients

Scale
  • 4 ripe avocados
  • 1½ tablespoons lemon or lime juice
  • Salt & black pepper, to taste
  • 2 large cucumbers, thinly sliced into rounds
  • 1 small ball burrata or fresh mozzarella (hat trim)
  • 1 mozzarella pearl (hat pom-pom)
  • Black olives or olive paste (eyes & smile)
  • Fresh dill or parsley (hair & eyebrows)
  • Red bell pepper or salami slice (Santa hat)
  • Salami or pepperoni slices (optional)
  • Green olives (optional)
  • Crackers or crostini (optional)
  • Cheese cubes (optional)

Instructions

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  2. Mash the avocado with lemon or lime juice, and season with salt and black pepper to taste.
  3. On a large board or serving platter, arrange the mashed avocado in the shape of the Grinch’s face.
  4. Use cucumber slices to create the Grinch’s body and details.
  5. Place the burrata or mozzarella for the hat trim on top of the avocado.
  6. Add the mozzarella pearl as the pom-pom on the hat.
  7. Create eyes and smile using black olives or olive paste.
  8. Flair the hair and eyebrows with fresh dill or parsley.
  9. Place a red bell pepper slice or salami as the Santa hat.
  10. Optionally, add salami or pepperoni slices, green olives, crackers, crostini, and cheese cubes around the board for extra variety.
