Description

A comforting casserole featuring tender ground beef and fluffy potatoes, baked in a creamy blend of flavors that brings warmth to the table.


Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peeled and dice the potatoes into small, even cubes.
  3. Chop the onion and mince the garlic cloves.
  4. Heat olive oil over medium heat in a large skillet; add chopped onion and minced garlic and sauté until fragrant.
  5. Add ground beef to the skillet, season, and cook until browned.
  6. Pour in the beef broth, stir well, and let simmer for a few minutes.
  7. In a large mixing bowl, combine diced potatoes with the beef mixture, folding in sour cream and half of the cheddar cheese.
  8. Transfer to a baking dish, top with remaining cheddar cheese, and cover tightly with foil.
  9. Bake for 30 minutes, remove foil, and continue baking for another 10-15 minutes.
  10. Let it rest for 10 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. This casserole can also be made ahead of time and stored unbaked in the refrigerator for up to 2 days.
