Quick and satisfying ground beef quesadillas, perfect for busy weeknights or casual get-togethers.
Ingredients

- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Heat a bit of oil in a skillet over medium-high heat.
- Add the chopped onion and bell pepper, sautéing until tender.
- Add ground beef and break it up as it cooks. Season with garlic powder, chili powder, salt, and pepper. Cook until the beef is browned.
- Remove from heat and let cool slightly.
- Clean the skillet if necessary, and place a tortilla in it over medium heat.
- Add a portion of the beef mixture and cheese to one half of the tortilla.
- Fold the tortilla over and press down gently with a spatula.
- Cook for 2-3 minutes on each side until golden brown and cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut cooked quesadillas into wedges and serve warm.
Notes
Serve with salsa, guacamole, or sour cream for added flavor. Can be stored in the fridge for up to three days.
