Description

Quick and satisfying ground beef quesadillas, perfect for busy weeknights or casual get-togethers.


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Heat a bit of oil in a skillet over medium-high heat.
  2. Add the chopped onion and bell pepper, sautéing until tender.
  3. Add ground beef and break it up as it cooks. Season with garlic powder, chili powder, salt, and pepper. Cook until the beef is browned.
  4. Remove from heat and let cool slightly.
  5. Clean the skillet if necessary, and place a tortilla in it over medium heat.
  6. Add a portion of the beef mixture and cheese to one half of the tortilla.
  7. Fold the tortilla over and press down gently with a spatula.
  8. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
  9. Repeat with remaining tortillas and filling.
  10. Cut cooked quesadillas into wedges and serve warm.

Notes

Serve with salsa, guacamole, or sour cream for added flavor. Can be stored in the fridge for up to three days.
