- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 cup Guinness beer
- 1 cup pearl barley
- 2 potatoes, diced
- Salt and pepper to taste
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the beef cubes, seasoning with salt and pepper. Sear until browned on all sides.
- Once the beef is browned, introduce the chopped onion, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until softened.
- Stir in thyme, rosemary, and tomato paste. Cook for about 1 minute.
- Pour in beef broth and Guinness, bringing the mixture to a gentle boil.
- Stir in pearl barley and diced potatoes. Lower the heat, cover, and let it simmer for about 2 hours.
- Before serving, taste and adjust seasoning with salt and pepper. Ladle the stew into warm bowls.
