Description

A delicious and nutritious meal prep bowl featuring marinated chicken, quinoa or brown rice, roasted broccoli, and cherry tomatoes, perfect for busy weekdays.


Ingredients

Scale
  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 cup quinoa or brown rice
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper.
  2. Add the chicken breasts to the marinade and let it marinate for at least 30 minutes.
  3. Cook the quinoa or brown rice according to package instructions.
  4. Heat a non-stick skillet or grill pan over medium-high heat and grill or sauté the marinated chicken until fully cooked (about 6-7 minutes per side).
  5. Add the broccoli florets to the same pan and sauté until tender (about 4-5 minutes).
  6. In meal prep containers, divide the quinoa or rice, sliced chicken, sautéed broccoli, and halved cherry tomatoes.
  7. Garnish each bowl with fresh parsley before sealing them.
  8. Store in the refrigerator for up to five days.

Notes

Prep the chicken marinade the night before for more flavor. You can also cook the grains ahead of time and quickly reheat them.
