Ingredients

  • 1/2 onion, finely chopped

Instructions

  1. Peel and grate the sweet potatoes into a bowl.
  2. Remove excess moisture by squeezing the grated sweet potatoes in a clean dish towel.
  3. In a large mixing bowl, combine the drained sweet potatoes with the chopped onion, olive oil, salt, pepper, and any optional spices or herbs. Mix well.
  4. Heat a large skillet over medium heat, adding extra olive oil if sticking is a concern.
  5. Pour in the sweet potato mixture, spreading it evenly across the pan.
  6. Cook for 5 to 7 minutes on one side until crispy and golden brown.
  7. Flip the hash browns and cook for another 5 to 7 minutes until the other side is crispy and golden.
  8. Serve hot, enjoying them as a breakfast side or main dish.
