Ingredients

  • 1 lb (450g) Chicken Breasts, cut into bite-sized pieces
  • 2 Bell Peppers, chopped (red, yellow, green)
  • 1 Zucchini, chopped
  • 1 Red Onion, sliced
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 2 tbsp Lemon Juice
  • 1 tsp Oregano
  • 1 tbsp Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces and place them in a mixing bowl.
  3. Chop the bell peppers, zucchini, and red onion, and add them to the bowl with the chicken.
  4. Mix together olive oil, minced garlic, lemon juice, oregano, parsley, salt, and pepper in a separate bowl.
  5. Pour the marinade over the chicken and vegetables, stirring gently.
  6. Tear off pieces of aluminum foil and divide the mixture among the packets.
  7. Fold the foil edges to seal tightly.
  8. Cook for 25-30 minutes, or until chicken is cooked through.
  9. Carefully open the packets and serve hot.

Notes

You can prepare the chicken and vegetables ahead of time and marinate shortly before cooking. Customize with different proteins or vegetables as desired.
