Description

Ingredients

  • 2 cups cottage cheese (drained)
  • 3/4 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 3 large eggs
  • 1 cup frozen chopped spinach (thawed and squeezed dry)
  • 1 cup canned or jarred artichoke hearts (drained and chopped)
  • 2 cloves garlic (minced)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking dish by greasing it with cooking spray or butter.
  2. In a large mixing bowl, combine the drained cottage cheese with eggs, thawed spinach, chopped artichoke hearts, crumbled feta, Parmesan cheese, and minced garlic. Mix thoroughly with a spatula.
  3. Season with salt and pepper, adjusting to your preference.
  4. Pour the mixture into the prepared baking dish, spreading evenly.
