Description

A colorful and festive poke cake made with gelatin and whipped topping, perfect for holiday celebrations.


Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 package (3 oz) red gelatin (like strawberry or cherry)
  • 1 package (3 oz) green gelatin (like lime)
  • 1 cup whipped topping (like Cool Whip)
  • Sprinkles or holiday-themed decorations for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Carefully stir in the boiling water until the batter is smooth (the batter will be thin).
  5. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for about 10 minutes, then poke holes all over the top of the cake using a fork or a skewer.
  7. Prepare the red gelatin according to package instructions and pour it over the cake, ensuring it fills the holes. Repeat with the green gelatin, pouring it over the cake in a similar manner.
  8. Refrigerate the cake for at least 2 hours to allow the gelatin to set.
  9. Once set, spread the whipped topping evenly over the top of the cake.
  10. Garnish with festive sprinkles or decorations before serving.
