- 6 cups chicken broth
- 2 celery ribs, broken into large pieces
- ½ medium onion (keep intact)
- 1 lb boneless skinless chicken breasts, halved
- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1¼ tsp salt
- 1 cup plus 2 tbsp milk
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, combine chicken broth, celery, onion, and chicken breasts. Bring to a boil over medium-high heat.
- Reduce heat to low, cover partially, and simmer for about 15 minutes until the chicken is cooked through.
- In a medium bowl, whisk together flour, baking powder, and salt. Stir in milk until a shaggy dough forms.
- Dust counter with flour, roll out dumpling dough to ¼ inch thick, and cut into strips or squares about 1 to 2 inches wide.
- Remove chicken from broth and set aside. Discard celery and onion.
- Carefully drop dumpling strips into the simmering broth, stirring gently to prevent sticking. Cook for 20 to 30 minutes until puffy and broth thickens.
- Shred or chop cooked chicken and return it to the pot. Season with salt and pepper to taste.
- Serve warm and enjoy.
