Description

A joyful and colorful Funfetti Cake with fluffy vanilla flavor and creamy buttercream frosting, perfect for special occasions.


Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt (optional)
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/3 cup sour cream (or plain Greek yogurt)
  • 1/4 cup canola or vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup sprinkles (or to taste)
  • 1/2 cup unsalted butter (softened)
  • 2 teaspoons vanilla extract
  • Pinch of salt (optional)
  • 1 1/2 to 2 cups confectioners’ sugar
  • 1/3 cup sprinkles (or to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your pans by greasing and lining them with parchment paper.
  2. Combine dry ingredients: In a bowl, whisk together flour, baking powder, salt, and half of the sprinkles; set aside.
  3. Mix wet ingredients: In another bowl, beat egg, sugar, buttermilk, sour cream, oil, and vanilla until thoroughly combined.
  4. Combine both mixtures gradually adding dry mixture to wet, mixing carefully until no dry flour remains. Fold in remaining sprinkles gently.
  5. Pour evenly into prepared cake pans. Bake for 25–30 minutes or until a toothpick comes out clean. Cool for about 10 minutes before transferring to a wire rack.
  6. Beat softened butter in a mixing bowl until creamy and smooth for the frosting.
  7. Add vanilla and salt, blending in to enhance the flavor.
  8. Incorporate confectioners’ sugar gradually, mixing on low first. Increase speed and beat until fluffy and spreadable.
  9. Mix in extra sprinkles for delightful pops of color.

Notes

This cake can be made a day in advance. Store wrapped at room temperature for best flavor. Customize by adding jam or switching up sprinkles for seasonal themes.
