A comforting and hearty soup combining Italian sausage, creamy cheese ravioli, and fresh spinach in a flavorful broth.

- 1 package of cheese ravioli
- 1 pound Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it apart as it cooks. Remove excess fat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 3 to 5 minutes.
- Pour in the chicken broth and can of diced tomatoes, stirring to combine. Increase heat to bring to a gentle boil.
- Stir in the cheese ravioli and cook according to the package instructions, about 4 to 7 minutes, until tender and floating.
- Gently add spinach and Italian seasoning, cooking for a couple of minutes until the spinach wilts.
- Season with salt and pepper to taste, keeping in mind flavors deepen over time.
- Serve hot, topped with grated Parmesan cheese.
Notes
Great to serve with crusty bread or a salad. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
