Description

A comforting and hearty soup combining Italian sausage, creamy cheese ravioli, and fresh spinach in a flavorful broth.


Ingredients

Scale
  • 1 package of cheese ravioli
  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it apart as it cooks. Remove excess fat.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 3 to 5 minutes.
  3. Pour in the chicken broth and can of diced tomatoes, stirring to combine. Increase heat to bring to a gentle boil.
  4. Stir in the cheese ravioli and cook according to the package instructions, about 4 to 7 minutes, until tender and floating.
  5. Gently add spinach and Italian seasoning, cooking for a couple of minutes until the spinach wilts.
  6. Season with salt and pepper to taste, keeping in mind flavors deepen over time.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

Great to serve with crusty bread or a salad. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
