Ingredients

  • 9 tbsp unsalted butter
  • 1 ¼ cups granulated sugar
  • ¼ cup cocoa powder, sifted
  • ½ tsp vanilla extract
  • 1 tbsp red food coloring
  • ⅛ tsp salt
  • ¼ tsp espresso powder
  • ½ tsp vinegar
  • 2 large eggs
  • ¾ cup all-purpose flour
  • 9 oz cream cheese, room temperature
  • 3 tbsp additional sugar (for frosting)
  • ½ tsp vanilla extract (for frosting)
  • 1 egg yolk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a large mixing bowl, then stir in the granulated sugar until smooth.
  3. Add cocoa powder, salt, and espresso powder, whisking until blended.
  4. Beat in the eggs one at a time, then add vanilla extract, vinegar, and red food coloring, whisking until combined.
  5. Gradually add the flour, folding gently until just combined.
  6. In another bowl, mix cream cheese, additional sugar, vanilla extract, and egg yolk until smooth for the filling.
  7. Grease or line a mini muffin pan. Spoon a small amount of brownie batter into each cup, then dollop cream cheese mixture on top, followed by more brownie batter to enclose the filling.
  8. Bake for 18-20 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or cool completely.

Notes

For make-ahead, prepare the brownie mix and cream cheese filling a day in advance. Store separately in the refrigerator.
