- 2 large eggs
- ¾ cup all-purpose flour
- 9 oz cream cheese, room temperature
- 3 tbsp additional sugar (for frosting)
- ½ tsp vanilla extract (for frosting)
- 1 egg yolk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a large mixing bowl, then stir in the granulated sugar until smooth.
- Add cocoa powder, salt, and espresso powder, whisking until blended.
- Beat in the eggs one at a time, then add vanilla extract, vinegar, and red food coloring, whisking until combined.
- Gradually add the flour, folding gently until just combined.
- In another bowl, mix cream cheese, additional sugar, vanilla extract, and egg yolk until smooth for the filling.
- Grease or line a mini muffin pan. Spoon a small amount of brownie batter into each cup, then dollop cream cheese mixture on top, followed by more brownie batter to enclose the filling.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or cool completely.
Notes
For make-ahead, prepare the brownie mix and cream cheese filling a day in advance. Store separately in the refrigerator.
