- 1.5 cups buttermilk
- 2 large eggs
- 0.25 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 cup corn kernels (fresh or frozen, optional)
- Vegetable oil (for frying)
- 0.5 cup unsalted butter (for glaze)
- 0.33 cup honey
- 1 pinch sea salt
Instructions
- Mix the dry ingredients: In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and baking soda until combined.
- Whisk the wet ingredients: In a medium bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
- Combine wet and dry: Pour wet mixture into dry ingredients and fold gently. Add corn kernels if using.
- Heat the oil: In a deep skillet, heat vegetable oil to 350°F (175°C).
- Fry the fritters: Drop scoops of batter into the hot oil and fry in batches for 3–4 minutes per side until golden brown.
- Drain on a wire rack to keep crispy.
- Make the honey butter glaze: Melt butter in a saucepan, stir in honey and sea salt until smooth.
- Serve immediately: Drizzle the warm fritters with honey butter glaze and enjoy!
Notes
Fritters can be made ahead by preparing the dry and wet ingredients separately. Cooked fritters can be frozen for up to 2 months.
