Instructions
- Prepare the Marinade: In a small bowl, whisk together honey, lime juice, olive oil, chili powder, cumin, minced garlic, salt, and black pepper until smooth.
- Marinate the Chicken: Place chicken in a dish or zip-top bag, pour marinade over the chicken, and marinate for at least 15 minutes.
- Grill to Perfection: Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on each side until cooked through (internal temperature of 165°F). Let rest for 5 minutes before slicing.
- Assemble the Salad: In a large bowl, toss together romaine lettuce, cherry tomatoes, corn, black beans, cheese, avocado, and red onion.
- Dress the Salad: Combine honey, lime juice, olive oil, cumin, and chili powder in a jar or bowl, shake or whisk to combine. Drizzle over salad and toss gently.
