Description

A vibrant salad featuring grilled chicken, fresh veggies, and a honey lime dressing that brings comfort and excitement to your meal.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked corn kernels
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1 ripe avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup tortilla strips or crushed tortilla chips (optional)
  • Fresh cilantro leaves for garnish

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together honey, lime juice, olive oil, chili powder, cumin, minced garlic, salt, and black pepper until smooth.
  2. Marinate the Chicken: Place chicken in a dish or zip-top bag, pour marinade over the chicken, and marinate for at least 15 minutes.
  3. Grill to Perfection: Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on each side until cooked through (internal temperature of 165°F). Let rest for 5 minutes before slicing.
  4. Assemble the Salad: In a large bowl, toss together romaine lettuce, cherry tomatoes, corn, black beans, cheese, avocado, and red onion.
  5. Dress the Salad: Combine honey, lime juice, olive oil, cumin, and chili powder in a jar or bowl, shake or whisk to combine. Drizzle over salad and toss gently.
  6. Serve and Enjoy: Top salad with sliced chicken, optional tortilla strips, and cilantro, serve immediately.

Notes

For a lower-calorie version, swap cheese for non-dairy alternatives. Marinating longer enhances flavor.
