Description

A luxurious cake featuring layers of rich chocolate and vibrant raspberry mousse, perfect for celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk
  • 1 cup fresh raspberries
  • 1 cup dark chocolate chips
  • 1 tsp agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the all-purpose flour, cocoa powder, granulated sugar, and baking powder in a large mixing bowl.
  3. Combine the eggs, vegetable oil, and whole milk in another bowl, whisking until frothy.
  4. Blend the wet mixture into the dry ingredients gently, being careful not to overmix.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
  7. Melt the dark chocolate chips over a double boiler and warm the raspberries with agar-agar in another pot.
  8. Combine the melted chocolate and raspberry mixture to create a velvety mousse.
  9. Assemble the cake by placing one layer on a serving platter, spreading half the mousse on top, and then adding the second layer.
  10. Spread the remaining mousse over the top and garnish with fresh raspberries.

Notes

You can prepare the cake layers a day in advance. For a quicker baking option, use an air fryer at 320°F (160°C).
