- 1 cup granulated sugar

- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup whole milk
- 1 cup fresh raspberries
- 1 cup dark chocolate chips
- 1 tsp agar-agar powder
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk together the all-purpose flour, cocoa powder, granulated sugar, and baking powder in a large mixing bowl.
- Combine the eggs, vegetable oil, and whole milk in another bowl, whisking until frothy.
- Blend the wet mixture into the dry ingredients gently, being careful not to overmix.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
- Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
- Melt the dark chocolate chips over a double boiler and warm the raspberries with agar-agar in another pot.
- Combine the melted chocolate and raspberry mixture to create a velvety mousse.
- Assemble the cake by placing one layer on a serving platter, spreading half the mousse on top, and then adding the second layer.
- Spread the remaining mousse over the top and garnish with fresh raspberries.
Notes
You can prepare the cake layers a day in advance. For a quicker baking option, use an air fryer at 320°F (160°C).
