- 4 large potatoes, peeled and diced
- 1 cup leeks, chopped
- 4 tablespoons butter
- 1/2 cup milk
- 2 cups kale, chopped
- Salt and pepper, to taste
Instructions
- Fill a large pot with water and bring it to a rolling boil. Add the diced potatoes and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Add the butter and milk into the hot potatoes. Mash until smooth and fluffy.
- In a separate skillet, melt a little butter over medium heat. Add the chopped leeks and sauté until soft and fragrant, about 4-5 minutes.
- Stir the sautéed leeks into the creamy potato mixture until combined.
- In the same skillet, add the chopped kale and cook on medium heat until crispy and slightly browned, about 5-6 minutes.
- Season the potato mixture with salt and pepper to taste. Serve topped with crispy kale.
Notes
For variations, consider adding cheese or spicy elements. Store leftovers in an airtight container for up to three days.
