Instructions
- In a mixing bowl, beat powdered sugar, butter, peppermint extract, and heavy cream until a smooth, stiff dough forms.
- Shape into small discs and place on a parchment-lined baking sheet. Freeze for 20 minutes to firm.
- Meanwhile, melt chocolate (with vegetable oil if using) in the microwave or double boiler until smooth.
- Dip each chilled peppermint disc into melted chocolate, letting excess drip off, and place back on the sheet.
- Decorate with sprinkles or crushed candy canes if desired. Chill until chocolate sets completely.
