Description

A delicious and satisfying veggie burger melt featuring Portabella mushrooms, creamy filling, and vibrant spinach.


Ingredients

  • 4 large Portabella Mushrooms
  • 4 pieces Veggie Burgers
  • 8 oz Cream Cheese
  • 1 cup Thawed Spinach
  • 1/2 cup Mayonnaise
  • 1/2 cup Feta Cheese
  • 1 tsp Garlic Powder
  • 1/4 tsp Red Pepper Flakes
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the Portabella caps by cleaning and seasoning with salt and pepper.
  3. Whip together cream cheese, spinach, mayonnaise, feta cheese, garlic powder, and red pepper flakes in a mixing bowl.
  4. Assemble by placing a veggie burger on each mushroom cap and spooning the creamy mixture on top.
  5. Bake for 20-25 minutes until the cheese is melty and mushrooms are tender.
  6. Serve hot and enjoy!

These burger melts can be prepped ahead of time and stored in the fridge until baking.
