- 2 large yellow or sweet onions
- 8 oz cream cheese (softened)
- 1 cup shredded sharp cheddar
- 1–2 jalapeños, finely diced (seeded for mild heat)
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1½ cups seasoned breadcrumbs or panko
- Optional: ¼ cup bacon bits
- Optional: ½ tsp garlic powder
- Optional: 2 tbsp chopped scallions
- Oil for frying (vegetable or canola)
Instructions
- Slice the onions into ½-inch thick rings and carefully separate the layers to form sturdy rings.
- In a bowl, combine cream cheese, cheddar, and diced jalapeños. If using optional ingredients, mix them in and chill the mixture for about 10 minutes.
- Spoon or pipe the filling into each onion ring and smooth the edges.
- Freeze the stuffed rings on a parchment-lined tray for 20 to 30 minutes.
- Dredge rings in flour, dip in beaten eggs, then roll in breadcrumbs. Optionally, double-dip for extra crunch.
- Heat oil to 350°F (175°C) and fry the rings in batches for 2 to 3 minutes per side until golden brown.
- Drain on paper towels and serve hot with dipping sauces.

For easier assembly, prepare the filling in advance. Variety in cheese and meat options can be used for personalization.
