Description

Crispy onion rings stuffed with creamy jalapeño popper filling, perfect for any gathering.


Ingredients

  • 2 large yellow or sweet onions
  • 8 oz cream cheese (softened)
  • 1 cup shredded sharp cheddar
  • 12 jalapeños, finely diced (seeded for mild heat)
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1½ cups seasoned breadcrumbs or panko
  • Optional: ¼ cup bacon bits
  • Optional: ½ tsp garlic powder
  • Optional: 2 tbsp chopped scallions
  • Oil for frying (vegetable or canola)

Instructions

  1. Slice the onions into ½-inch thick rings and carefully separate the layers to form sturdy rings.
  2. In a bowl, combine cream cheese, cheddar, and diced jalapeños. If using optional ingredients, mix them in and chill the mixture for about 10 minutes.
  3. Spoon or pipe the filling into each onion ring and smooth the edges.
  4. Freeze the stuffed rings on a parchment-lined tray for 20 to 30 minutes.
  5. Dredge rings in flour, dip in beaten eggs, then roll in breadcrumbs. Optionally, double-dip for extra crunch.
  6. Heat oil to 350°F (175°C) and fry the rings in batches for 2 to 3 minutes per side until golden brown.
  7. Drain on paper towels and serve hot with dipping sauces.
