Description

  • 1 large sweet onion, sliced into 1-inch thick rings
  • 8 oz cream cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup diced jalapeños
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup flour
  • Oil for frying
  • Ranch dressing or chipotle aioli (for serving)

Instructions

  1. Prepare the onions: Carefully slice the onions into thick rings about 1-inch thick, keeping the outer layers intact. Gently separate each ring and set aside.
  2. Mix the stuffing: In a mixing bowl, combine the cream cheese, cheddar cheese, and diced jalapeños. Use a fork or spatula to blend them until smooth and well unified.
  3. Stuff the rings: Take each onion ring, and using a spoon or piping bag, generously fill the center with the creamy cheese mixture.
  4. Set up your breading station: In three separate bowls, place flour in one, beaten eggs in another, and breadcrumbs in the last.
  5. Coat the onion rings: Take a stuffed onion ring, coat it in flour, dip it in the egg, and roll it in breadcrumbs until covered.
  6. Heat the oil: In a deep fryer or large pot, heat oil to 350°F (175°C).
  7. Fry with care: Batch fry each onion ring for about 3-4 minutes until golden brown and crispy.
  8. Drain and serve: Transfer the fried onion rings to a plate lined with paper towels and serve hot with ranch or chipotle aioli.

For a healthier version, try baking at 400°F (200°C) for 20-25 minutes or using an air fryer.
