- 8 oz cream cheese
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup diced jalapeños
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup flour
- Oil for frying
- Ranch dressing or chipotle aioli (for serving)
Instructions
- Prepare the onions: Carefully slice the onions into thick rings about 1-inch thick, keeping the outer layers intact. Gently separate each ring and set aside.
- Mix the stuffing: In a mixing bowl, combine the cream cheese, cheddar cheese, and diced jalapeños. Use a fork or spatula to blend them until smooth and well unified.
- Stuff the rings: Take each onion ring, and using a spoon or piping bag, generously fill the center with the creamy cheese mixture.
- Set up your breading station: In three separate bowls, place flour in one, beaten eggs in another, and breadcrumbs in the last.
- Coat the onion rings: Take a stuffed onion ring, coat it in flour, dip it in the egg, and roll it in breadcrumbs until covered.
- Heat the oil: In a deep fryer or large pot, heat oil to 350°F (175°C).
- Fry with care: Batch fry each onion ring for about 3-4 minutes until golden brown and crispy.
- Drain and serve: Transfer the fried onion rings to a plate lined with paper towels and serve hot with ranch or chipotle aioli.
Notes
For a healthier version, try baking at 400°F (200°C) for 20-25 minutes or using an air fryer.
