- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Pat the pork chops dry with paper towels and season both sides with salt and pepper.
- Heat a cast iron skillet over medium-high heat and add the olive oil.
- Once hot, lay the pork chops in the pan and sear for 3-4 minutes until golden-brown.
- Flip the pork chops and sear the other side for another 3-4 minutes.
- Lower the heat to medium and cook for an additional 5-7 minutes, until the internal temperature reaches 145°F (63°C).
- Remove from skillet and let rest for 5 minutes before serving.
Notes
Let your pork chops sit at room temperature for 20-30 minutes before cooking for even cooking. Use an instant-read thermometer for best results.
