Ingredients

  • 4 Boneless, Skinless Chicken Breasts (approximately 1.3 lbs)
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Garlic Powder
  • 2 Tablespoons Olive Oil
  • 8 Ounces Cremini or White Mushrooms, Sliced
  • 3 Cups Fresh Spinach
  • 3 Cloves Garlic, Minced
  • 1 Cup Heavy Cream
  • 2 Ounces Cream Cheese, Softened
  • 1/3 Cup Grated Parmesan Cheese
  • 1/4 Teaspoon Ground Nutmeg (Optional)
  • 1/4 Teaspoon Red Pepper Flakes (Optional)
  • Fresh Parsley, Chopped (Optional)

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season with salt, black pepper, and garlic powder.
  2. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5 to 6 minutes on each side until golden brown and cooked through. Transfer to a plate.
  3. Sauté the mushrooms: In the same skillet, add sliced mushrooms and cook for 4-5 minutes until softened.
  4. Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Make the cream sauce: Reduce heat to medium-low, add heavy cream, cream cheese, and Parmesan, stirring until smooth.
  6. Season the sauce: Add optional nutmeg and red pepper flakes, and simmer for another 2-3 minutes.
  7. Add spinach: Toss in fresh spinach, cooking until wilted, about 1-2 minutes.
  8. Combine with chicken: Return the chicken to the skillet, spoon sauce over, and simmer for another 2-3 minutes.
  9. Garnish and serve: Sprinkle with parsley and serve hot.

Notes

For meal prep, store chicken and sauce separately. Reheat gently and add a splash of cream if needed.
