- 4 Boneless, Skinless Chicken Breasts (approximately 1.3 lbs)
- 1 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1/2 Teaspoon Garlic Powder
- 2 Tablespoons Olive Oil
- 8 Ounces Cremini or White Mushrooms, Sliced
- 3 Cups Fresh Spinach
- 3 Cloves Garlic, Minced
- 1 Cup Heavy Cream
- 2 Ounces Cream Cheese, Softened
- 1/3 Cup Grated Parmesan Cheese
- 1/4 Teaspoon Ground Nutmeg (Optional)
- 1/4 Teaspoon Red Pepper Flakes (Optional)
- Fresh Parsley, Chopped (Optional)
Instructions
- Season the chicken: Pat the chicken breasts dry and season with salt, black pepper, and garlic powder.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5 to 6 minutes on each side until golden brown and cooked through. Transfer to a plate.
- Sauté the mushrooms: In the same skillet, add sliced mushrooms and cook for 4-5 minutes until softened.
- Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
- Make the cream sauce: Reduce heat to medium-low, add heavy cream, cream cheese, and Parmesan, stirring until smooth.
- Season the sauce: Add optional nutmeg and red pepper flakes, and simmer for another 2-3 minutes.
- Add spinach: Toss in fresh spinach, cooking until wilted, about 1-2 minutes.
- Combine with chicken: Return the chicken to the skillet, spoon sauce over, and simmer for another 2-3 minutes.
- Garnish and serve: Sprinkle with parsley and serve hot.
Notes
For meal prep, store chicken and sauce separately. Reheat gently and add a splash of cream if needed.
