Description

A delicious keto-friendly dish featuring salmon fillets topped with herb-infused butter and roasted cauliflower florets that brings out the natural flavors.


Ingredients

  • 4 salmon fillets, skin-on or skinless (5 oz each)
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh chives, finely chopped
  • 1 garlic clove, minced
  • 1 lemon, zest only
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving
  • 1 medium cauliflower head, cut into florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine in a mixing bowl the softened butter, parsley, dill, chives, minced garlic, lemon zest, sea salt, and black pepper. Mix thoroughly until well incorporated, then set aside.
  3. Place cauliflower florets on the prepared baking sheet. Drizzle with olive oil, sea salt, black pepper, and optional smoked paprika. Toss to coat evenly, then arrange in a single layer. Roast for 25 minutes, flipping halfway through.
  4. Pat the salmon fillets dry with paper towels. Place them skin-side down in a separate baking dish lined with parchment paper and generously spread about 1 tablespoon of herb butter over each fillet.
  5. With 12 minutes of cauliflower roasting left, place the salmon in the oven alongside the cauliflower and bake for 10-12 minutes until the salmon flakes easily with a fork.
  6. Transfer the salmon and roasted cauliflower onto serving plates. Garnish the salmon with additional herbs and serve with lemon wedges.

Notes

For make-ahead, prepare the herb butter in advance and store it in the refrigerator.
