- 4 salmon fillets, skin-on or skinless (5 oz each)
- 1/4 cup unsalted butter, softened
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon fresh chives, finely chopped
- 1 garlic clove, minced
- 1 lemon, zest only
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving
- 1 medium cauliflower head, cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine in a mixing bowl the softened butter, parsley, dill, chives, minced garlic, lemon zest, sea salt, and black pepper. Mix thoroughly until well incorporated, then set aside.
- Place cauliflower florets on the prepared baking sheet. Drizzle with olive oil, sea salt, black pepper, and optional smoked paprika. Toss to coat evenly, then arrange in a single layer. Roast for 25 minutes, flipping halfway through.
- Pat the salmon fillets dry with paper towels. Place them skin-side down in a separate baking dish lined with parchment paper and generously spread about 1 tablespoon of herb butter over each fillet.
- With 12 minutes of cauliflower roasting left, place the salmon in the oven alongside the cauliflower and bake for 10-12 minutes until the salmon flakes easily with a fork.
- Transfer the salmon and roasted cauliflower onto serving plates. Garnish the salmon with additional herbs and serve with lemon wedges.
Notes
For make-ahead, prepare the herb butter in advance and store it in the refrigerator.
