- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 1/2 tablespoons gochujang
- 1 teaspoon sesame oil
- 1 tablespoon rice vinegar
- 3 cups cooked white rice
- 1/2 cucumber, sliced
- 1/2 cup carrots, julienned
- 2 green onions, chopped
- 1 tablespoon sesame seeds (optional)
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, garlic, ginger, and 1 tablespoon soy sauce until just combined. Roll into bite-sized balls.
- Heat oil in a skillet and cook meatballs for 8–10 minutes until browned and fully cooked. Set aside.
- In the same pan, whisk soy sauce, brown sugar, gochujang, vinegar, garlic, ginger, and sesame oil. Simmer until slightly thickened.
- Return meatballs to the skillet and toss to coat with the sauce.
- Scoop rice into bowls, top with meatballs, cucumber, carrots, green onions, and sesame seeds.
- Drizzle extra sauce over the top and serve warm.
Notes
- Feel free to adjust the spice level by varying the amount of gochujang.
- Optional toppings can include avocado or pickled vegetables for added flavor.
- This dish can be made with ground turkey or chicken for a lighter option.
