Description

Delicious lemon blondies that combine sweetness and citrus, perfect for summer gatherings or afternoon snacks.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup lemon juice
  • Zest of 2 lemons
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Whisk together the melted butter and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in lemon juice and zest.
  4. Whisk together flour, salt, and baking powder in a separate bowl.
  5. Combine the dry ingredients with the wet mixture, stirring gently.
  6. Pour the batter into the prepared baking dish and smooth it out.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool for at least 30 minutes before glazing.
  9. Prepare the glaze by mixing powdered sugar and lemon juice until smooth.
  10. Drizzle the glaze over the cooled blondies, then cut into squares.
