- Zest of 1 lemon

Instructions
- Preheat the oven to 425°F (220°C). Grease a 9×13 inch baking dish.
- Whisk together the flour, baking powder, salt, and sugar in a large bowl.
- Mix the melted butter, milk, egg, vanilla extract, lemon zest, and lemon juice in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Spread the mixture into the prepared baking dish.
- Bake for 20-25 minutes until golden brown.

Notes
Don’t overmix. Stir until the flour disappears; a few streaks are fine. If the top is browning too fast, tent with foil for the last 5 minutes.
